1. Pumpkins in Recipes As food, pumpkins are low in calories, yet high in Vitamin A, Vitamin C, protein, and potassium. Pull out your favorite cookbook and search for recipes containing pumpkin. Pumpkin breads, pumpkin pies, and muffins are favorites, but you can probably find plenty of others. As an impromptu house guest in Paris, I was once served an incredible pumpkin soup (though I never completed my search for that particular). There are more exotic recipes to try as well - pumpkin juice, pumpkin ice cream, and even fried pumpkin.

2. Pumpkin Seeds Pumpkin seeds (also called "pepitas") are also known to be highly nutritious, and are used in weight-loss diets. They provide fiber, healthy fats, and protein, as well as such minerals as magnesium, manganese, zinc, iron, and copper. They are also known to strengthen the immune system, and to be good for people with high cholesterol. 1. Baking - Cut the pumpkin into two halves, place it on a baking sheet {with the flat side down}, and bake it at 350 degrees Fahrenheit, for about an hour, or until it is tender when tested with a fork.
2. Microwave - Follow the above procedure, but instead of placing the pumpkin in an oven, microwave it on high for about 15 minutes, or until it is tender.
3. Boiling - Cut the pumpkin into large chunks and then rinse. Then, place the chunks in a pot, cover with water (fully immersing the pumpkins, while leaving one inch of water on top), and boil until tender. Once you've used one of the methods above to soften the pumpkin, cool it off, peel it, and mash it in a food processor. You can also use a potato masher or other similar device. Then, simply close the puree in zip lock bags, or whatever is convenient, and freeze it for for the winter. The puree can be used as a substitute for canned pumpkin, in any recipe.

5. Pumpkins as Dishes You can clean a pumpkin well, cut it in half, and dry it for use as a serving bowl or a flower vase. You can also use a halved pumpkin to cook or bake other foods in.

6. Pumpkins for the Skin Pumpkins contain anti-oxidants and alpha-hydroxy, which are said to be good for the skin. You can use pumpkin peels as a facial, to combat aging or other skin problems.

7. Pumpkins for Children and Games You can use pumpkins for children's drawing and carving contests. If your kids are too little to start carving yet, they can also decorate pumpkins with markers or paint - or even create a pumpkin collage. Another use of pumpkins is as targets for archery practice. We definitely don't recommend any games that involve throwing pumpkins, nor using them as substitutes for soccer balls. Your kids might have a great time making a Pumpkin Man - and it's much better for them than watching TV.

8. Pumpkins as Ornaments Pumpkins, gourds, and squash can be used to create candle holders, Thanksgiving centerpieces, and other ornaments.

9. Musical Pumpkins Yes, that's right, pumpkins make great musical instruments as well. Or, at least they can if you know how to make (and play) them. You can find a variety of ideas for instruments that can be made from gourds, squashes, and pumpkins. Although many musical instruments are made from gourds, one can easily imagine how a large or small pumpkin would do just as well in many cases.

10. Pumpkins for Crafts If you are an experienced craftsman or a devout hobbyist, you might try some more creative and advanced uses of pumpkins. You can make pumpkin leather like the American Indians did, or just settle with a simple pumpkin bird house. As you can see, there's really no need for pumpkins to go to waste, either before Halloween or afterwards. During economic recessions, it's not uncommon that people have more time on their hands than they have money. Instead of letting extra pumpkins go to waste, the above are a few ways to stretch your grocery budget a bit further, invest some time in your health, get your kids away from the screen, and have some fun at the same time.

DO COMPOST - For food compost it is important to use a plastic or metal compost bin:

- All your vegetable and fruit wastes, including rinds and cores even if they are moldy.
- Coffee grounds, tea bags and filters
- Crushed egg shells

Insufficient Vitamin D Levels in Pregnant Women

Irrelevant of where you stand on the Big Bang Theory, Adam & Eve or Darwin's evolution, the concept of women getting pregnant has been around for a very long time. And it's something we're very good at. Women have successfully given birth in the most difficult conditions, and to this day still do. In famine, war zones, severe poverty and with serious illnesses, women have produced healthy children "against the odds".

But that is where the problem lies: "against the odds". And as we learn more about pregnancy and foetal development and learn more about how lifestyle and nutrition can affect a baby's development in the womb, we also discover that there are things we can do to lower the risk of our babies having health problems. This is why pregnant women don't drink alcohol and avoid pate, soft cheeses, raw egg and such like. It is only relatively recently that pregnant women have been advised to significantly limit their tuna intake due to the effects mercury can have on their unborn child.

We are constantly learning about pregnancy and making lifestyle decisions based on those learnings. Recently attentions have turned to Vitamin D and the suggestion that mothers-to-be, even including those supplementing, might not be getting enough of this important vitamin - crucial for the development of the baby's bones and the health of the mother's.

A recent study in Northern Ireland tested the vitamin D levels in 99 pregnant women, plus a control group of 38, all living at latitudes of 54 to 55 degrees. In each gestation length group there were significant numbers deficient in Vitamin D and very high numbers with insufficient amounts. At 20 weeks, 44% of the group were Vitamin D deficient and a huge 96% were insufficient. And while those that supplemented did generally show higher levels, insufficiency was still evident.

This was an observational study, and therefore cannot be used to make recommendations on the exact levels of Vitamin D pregnant women should supplement with. However, it does give some suggestion that pregnant women should take a Vitamin D supplement, especially in the winter. Why? Our bodies produce Vitamin D when they get exposure to the sun, but in climates such as the UK our bodies may not produce any Vitamin D during the winter months so we are entirely reliant on getting this from our diet. Some foods are fortified with the vitamin but this study certainly suggests these levels aren't high enough for pregnant women.

Understandably there are very strict guidelines about what vitamins and minerals it is safe for pregnant women to supplement with which is why existing pregnancy supplements such as BioCare's Ante-Natal Forte include 5mcg of Vitamin D. These guidelines errs very much on the side of caution - as they should - but with the participation and moral difficulties of running experiments, this caution can actually mean pregnant women aren't getting the best nutritional support available.

This will always be the case, and the safety of every unborn child far outweighs the potential benefit more knowledge could bring. But it is also important to keep finding new, and safe, ways of increasing and improving our knowledge about pregnancy, and how supplementing could optimise the "odds" of a healthy child, and mother.

Early Pregnancy Cramping

The first few weeks of pregnancy can be exciting for a new mom, but it is also a time when women worry. Since some of the signs of miscarriage are similar to normal pregnancy symptoms, it is understandable why this time in a woman's pregnancy can be stressful.

One thing that is common and normal in early pregnancy is cramping. Cramping may begin shortly after ovulation and may continue throughout the first part of a woman's pregnancy.

Some causes of cramping in early pregnancy:

Cramping from the corpus luteum cyst - Some women notice mild cramping, spotting, or twinges caused by the corpus luteum cyst that forms after ovulation. When the woman's egg is released from her follicle during ovulation what remains of the follicle becomes the corpus lutem. This cyst is what secretes progesterone during the second half of the menstrual cycle. Progesterone helps to make the lining of the uterus thick and nutrient rich for implantation.

Implantation cramping - When the egg implants into the woman's uterus, this can also cause mild cramping. Implantation takes place around 7 to 10 days after ovulation. Implantation cramping may feel similar to menstrual cramps. A woman may notice implantation cramping before she would even be able to test positive on a home pregnancy test. Some women mistake this type of cramping as PMS or as a sign that they are not pregnant.

As the embryo burrows into the lining of a woman's uterus it can cause mild spotting or bleeding. The bleeding can be pink, red or brown, but is usually scant and not like a normal menstrual period. Implantation bleeding typically happens a few days before a woman's missed period. Spotting around this time is usually not something to worry about but any bleeding or spotting should be reported to a doctor.

Stretching Uterus - After implantation, bloating and cramping may continue. As the pregnancy progresses, the woman's uterus stretches and expands to make room for her growing baby. This stretching can cause mild cramping or a tugging sensation.

Constipation, gas and changes to the digestive system- Blood flow is increased during early pregnancy and higher progesterone levels may slow down the digestive system. This may cause a woman to feel more bloated and uncomfortable. Because the digestive system is slowed down, constipation may occur. Gas and digestive problems may be another cause of mild cramping in early pregnancy.

When is cramping cause for concern?

Cramping should not be so painful that it requires medication stronger than Tylenol. If the cramping is frequent or severe, a doctor should be contacted. If pregnancy cramping is accompanied by spotting, bleeding, or if something just doesn't feel right, a call to the doctor is in order.

Turning Stress in Children Into Resilience

Stress has become a dirty word in our fast-paced culture. It has been blamed for almost everything - from heart attacks to violence in society.

We hear often enough about those who have succumbed to stress like the father who kills his family and himself in a fit of despair over financial problems, like the children who gunned down teachers and schoolmates in a fit of hatred and despair.

We do not hear often enough about those who have blossomed from stress like the world class athlete or entrepreneur who turned their violent childhood into resolutions for change.

The truth is that our emotional infrastructure works like a muscle. The more we stress our muscles during a workout, the stronger we get. With this in mind, we should think of problems as opportunities for growth. We should dwell not on how problems can hurt us, but how they can make us stronger, more resilient.

If we can imbue our children with this kind of attitude, we will be building kids who can make a difference in this world. We will be building kids who can turn adversity inside out and reveal the blessing it hides. There is much that we as parents can do to help our children develop a repertoire of responses that can take them to "the next level" of resilience.

1. Cultivate a safe and honest relationship with your children. Allow them to know that they are loved totally and openly for who and what they are.

2. Make sure you are a positive role model. How do you respond to problems? Can you bring stress to the next level? Do you take positive action when a problem confronts you? Do you choose optimism in the face of distress? Do you work courageously towards a solution? Do you create unnecessary anxiety in your children? Children learn by what they live and what they see. Be totally mindful of this fact.

3. Praise your children and encourage them to do their best. Be there when they fall, not to berate them, but to offer them support. Children will not fear falling if they know deep down that they will not be erased by failure.

4. Cultivate laughter as a strategy for dealing with the ups and downs of life. Show your children that there is a positive and often funny side to all things serious.

5. Help your children relax. Encourage them to run and play. Exercise is a great way for relaxation; so is playing in nature.

6. Help make stress a positive aspect in your children's lives. Tell them that problems are there to make them stronger. If workouts build muscles, stress builds character.

7. Take the bogeyman out of stress. Celebrate life for all its diversity and love your children for who they are and what they do.

When life is not a bowl of cherries, we take out our shovels and plant cherry trees.

Home Vegetable Gardening - Growing Garden Cress

How to Teach Your Kid to Ride a Bike

When I taught my son how to ride a bike, I think he got his first bike when he was three years old. Of course he rode with training wheels and we got the smallest bike we could find. You can go to Target or Wal-Mart, they probably have the cheapest bikes. It's not like you need something fancy or super durable.

I think my son went through two bikes in this period. The second bike we got him was a little nicer, more like a BMX bike. When we got this one we were planning that he would eventually ride it without training wheels. We still got it at Target, but we made sure it was a little better quality. The price was still very reasonable.

He rode with training wheels for about a year and a half. He got pretty good riding that bike with the training wheels and he loved it.

As they ride more and more, you'll notice they start to balance more than just riding on the training wheels. What you can do so they have more chance to balance, is to raise the support wheels up off the ground an inch or so. Either they balance or they lean to the side some and ride that way.

Once they are starting to balance it's time to take the extra set of wheels off. It only took a session or two for my son to start riding on his own. We did it in a park on the grass. He started up with me holding onto his seat. There were a few false starts where he balanced briefly and I kept a hold of his bike seat. Then it happened, he started balancing on his own and I let go, he kept going faster and I couldn't keep up running along with him so I stopped and let him go. He made it about 30 feet, thinking I was holding onto his seat the whole time. He came to a rough stop and realized he had done it all on his own. Pretty exciting.

Remember when, as a kid, you ran through the back yard with a cape tied to your neck? Those were the days of fun and carefree play that marked childhood. Somewhere along the line, people changed what fun means, and if you ran around in a 'cape' today, well you might end up somewhere with white walls instead of green grass, unless, of course, it's Halloween. Halloween is that one day a year us adults get to dress up like we did when we were kids, but the days of sheets around our necks are gone (well unless you like the sheet look). Today there are superhero costumes at really inexpensive prices available on-line or at your local costume shop. Here are the top 7 superhero costumes for adults and kids alike.

Batman- Whether you wear the 1960s version or the 1990s version, this costume stands the test of time. The updated version is, of course, sexier, but the older version has its benefits as well (it's usually cheaper, for one).

The Lasso of Truth, gold bracelets (better known as vambraces), boots and of course the crown make this costume a fun piece of clothing to wear.

Daredevil - The movie may have semi-bombed, but this beloved comic book hero is an inspiration. Besides it is a great excuse to buy red leather pants and jacket.

Superman - Perhaps not the sexiest of costumes, the popularity of Smallville makes this a great character to emulate. Since his alter ego, Clark Kent, is also recognizable a simple pair of chinos, button down shirt with a superman t-shirt underneath is also a great way to wear this costume (without having to put on tights).

Supergirl - One of my favorite costumes of all time (as well as movies), this costume, unlike the Superman one, is very sexy and fun to wear.

Secondly, find someone whether a friend, your spouse or a relative who you can make a pact with that you will not over eat at the holidays. It is good to choose someone who you spend a great deal of time with. It is easier if you control your eating with a buddy.

Third, you want to make healthy food choices. You want to keep to a regular meal plan. Make sure you eat three meals a day. Do not skip meals because you have a party at night. If you do you are more likely to binge at dinner. Try to eat a lot of raw vegetables for appetizers. They will fill you up and they are low calorie. When at a buffet take small samples of everything so you don't feel deprived.

Fourth, balance calories, if you know you want to have a dessert make sure you eat less of the entrees. You can have both but in moderation.

Fifth, never go to a party hungry. If you feel hungry before a party have a small meal at home. You may want to have a piece of fruit, a small dish of vegetables or an energy bar.

Lastly, watch hat you drink. Alcoholic beverages can be very fattening. It is best to stick with water and diet drinks. But if you want to have an alcoholic beverage stick with wine, light beer or liquor mixed with diet beverages. Keep as far away as you can from drinks like egg nog and buttered rum.
